Box Roasted Swine - La Caja China & Tender Belly

I never pass up on a chance to eat a whole roasted pig or watch one get cooked. This time the method of choice was the old Chinese box roasting grille. The tool: La Caja China. The protein: Tender Belly Berkshire.

  1. We have one of these at our waterfowl club and use it often. It does a great job. We get our pigs in S. Phila from Espositos.
